Buckwheat & Brown rice pancakes

When I committed to a lifestyle of health and the decision to stop wheat for a while and help my digestion heal I didn’t fear for a moment the treats I’ll be missing, because there is always an alternative to our comfort foods.

Pancakes are a favorite in my house on Sunday mornings,but instead of using a boxed pancake mix that has tons of additives I can’t even pronounce I make my own gluten free kind.

Recipe:serves 3
– 1/4 cup buckwheat flour
– 1/2 cup brown rice flour
– 1 egg
– 1 ripe banana
– 1 cup unsweetened almond milk
– 1 tbsp coconut oil
