Butternut squash almond balls

One of the cookies I made for Christmas this year turned out so very delicious and had some positive feedback from friends and family who tried it.I’ve had few requests for the recipe,so here it is for whoever wants to make it.

Butternut squash (grind and mash it) – 1 cup

Almond butter (1/2 cup) or I used the almond flour left after making my almond milk(1 cup)

Coconut shreds(unsweetened) – the fine flakes,not the big ones – 1 cup
Maple syrup – 2 tblsp

Coconut oil – 3 tblsp
Vanilla extract – 1/4 tsp
Sea salt – a pinch
Cinnamon – 1 tsp

First squeeze the butternut squash from the excess water and trow it in the food processor (I used Vitamix and it works perfect)with all ingredients except the coconut shreds.When it becomes a homogenous mixture add half of the flakes if it
needs to be thicker so you can form the balls,then roll them in the left over coconut and leave in the freezer for 30 min.Once they harden you can store it in the fridge.
