This lentil quinoa salad is quick and easy once you precook the lentils and quinoa and let them cool off in the fridge.Then you can add all other ingredients,mix and season it with the olive oil,lemon and salt.
– 1 cup green lentils(soak it for one hour or more in water)
– 1 cup quinoa
– 1/2 cup edamame(cooked and peeled)
– 1/2 cup of shredded carrots and red cabbage
– 1/2 avocado(cubed)
– chopped cilantro
For the Dressing:
– coldpressed olive oil
– juice of 1/2 lemon
– Himalayan salt by taste
– pinch of cumin
